Yummy In My Tummy

I am always up for a new recipe, and I don't make separate meals for my kids, so the recipe has to pass the family taste test.  Lately I have made a few that really stand out and have now been added to the "recipe repeat" list. These are a few of my favorites...

Stuffed Baked Avocado - This was delicious!

What's in it
1 ripe avocado
1/4 cup of bread crumbs
1 clove of garlic, minced
1 Tbs. grated parmesan cheese
1 Tbs. chopped basil
1 Tbs. lemon juice
salt and pepper to taste
1/4 cup of roasted garlic tomato salsa

How to make it
Preheat oven to 450 degrees
Combine bread crumbs, garlic, cheese, basil,
   lemon juice, salt and pepper in a small bowl.
Cut the avocado lengthwise and spoon half the salsa
   in one 'hole' and the other half in the other.
Top with the bread crumb mixture.
Put in the oven for about 8 minutes then serve
   immediately.

Servings: 2 (half of an avocado is considered 1 serving).

Breakfast Grilled Cheese - Delicious!

What you need
cream cheese
butter
wheat bread
cinnamon/sugar
berries - you can use blueberries, strawberries, blackberries
   any kind of berry!

How to make it
butter the bread like you do for a lunch grilled cheese
On the other side of the bread, slap on the cream cheese
   and the berries then sprinkle on some cinnamon/sugar
put it together, put it in a pan and grill it up like a regular
   grilled cheese.
Cut it and eat it!!!
Beansie's favorite is the strawberry or the blueberry version.

Mini Pot Pies - crazy good!

Ingredients
2 cups of cooked, diced chicken breast
1 can cream of chicken soup
1 cup of frozen mixed veggies
1 cup of shredded cheddar cheese
1/2 Tbs. of dried thyme
1/2 Tbs. of dried basil
1 tsp. of onion powder
1 tsp. of garlic salt
2 - 10 ounce cans of Pillsbury biscuits

Instructions
Preheat oven to 400 degrees
In a large bowl, combine all ingredients (except the biscuits)
Lightly grease a 12-cup muffin tin and place the biscuits into each
   cup, pressing them in the bottom and up the sides
Evenly spoon the pot pie mixture in each biscuit cup.
Put in the oven for 15 minutes
Let rest for 3 minutes, then enjoy!

Greek Yogurt/Peanut Butter Dip - YUM!

What you need
small tub of greek vanilla yogurt
2 Tbs. of peanut butter
1/2 tsp. of honey
1/8 tsp. of cinnamon

pretzel sticks, apple slices, or toast slices

How to make it
Mix everything together and serve with a 'dipping food'
